• 1 can (10 oz) Rotel diced tomatoes with green chilies (drained)

• 1 medium onion, chopped

• 1 medium bell pepper, chopped (green or red)

• 1 cup sour cream

• 1 cup mayonnaise (can reduce to ½ cup if preferred)

• 8 oz shredded cheddar cheese (about 2 cups, divided)

• 8 oz shredded mozzarella cheese (about 2 cups, divided)

• 1 can (8-count) refrigerated biscuits (like Pillsbury Grands)

Instructions:

1. Preheat oven to 350°F (175°C).

2. Prepare biscuit crust: Grease a 9×13 baking dish, press biscuits into the bottom and slightly up the sides to form a crust. Bake for 10 minutes until lightly set (not fully baked).
